Ingredients
1 Pork Button Bones 2Kg
2 tbs ground white pepper* 15 mL
2 tbs fennel seed (or anise seed) 15 mL
2 tbs red pepper flakes 15 mL
2 tbs ground cinnamon 10 mL
2 tbs ground cloves 10 mL
2 tsp salt 5 mL
2 tbs ground ginger 15 mL
Legacy Tradition Pork Button Bones
Button bones used to be referred as "back rib tails." These are small bones that have delicious and tender loin meat attached to them just like back ribs.
Cooking Difficulty
Combine all ingredients.
Pre-heat oven to 350°F (177°C).
Rub the spice mixture all over the button bones.
Pour about 1/4" (7mm) boilng water into a large shallow baking dish.
Place the button bones in the dish, placing them on their sides for more even roasting and cover with foil.
Bake for 1 1/4 hours or until pork begins to shrink away from bone tips.
Remove from oven, pour off liquid.
Brush the button bones with honey-garlic barbecue sauce or plum sauce and return to the oven.*
Turn on the broiler and place the roasting pan under the broiler about 6" (15 cm) beneath.
Let the button bones crisp up for about 5 minutes under the broiler.
*If the weather is nice you can finish them at this stage on the barbecue over medium high heat for 5 minutes.
