Snow Pea, Green Onion, and Radish Salad

snow peas

green onions, thinly sliced on the diagonal

radishes, thinly sliced

¼ cup

rice vinegar

 60mL

1 ½ tsp

granulated sugar

8mL

1 Tbs

canola oil

 15mL

 

Cooking Difficulty


Steam the snow peas until just crisp-tender and they turn bright green, about 2 minutes. Chill under cold running water. Cut the snow peas on the diagonal into 1/2-inch diamond shapes, discarding the stem end.

In a medium serving bowl, combine the snow peas, green onions, and radishes. In a small bowl, whisk together the vinegar, sugar, and oil until the sugar dissolves. Pour over the salad and serve.
