Pork Roast Carnitas

Ingredients


1 pkg Legacy Boneless Pork Centre Roast, about 2.5lbs/1.1kg
1 Medium onion, chopped
3 Garlic cloves, crushed
1 Orange, quartered
1 Lime, juice only
1 Jalapeno pepper, seeds removed and chopped
1 tbsp Coriander seed 15ml
1 tsp Dried oregano 5ml
1 tsp Ground cumin 5ml
1 tsp Salt 5ml
15 Tortillas

 

Cooking Instructions


Cut pork loin in to one-inch cubes; remove most visible fat. Place in a heavy saucepan with remaining ingredients (except tortillas). Add water to just cover. Bring to boil and simmer, uncovered, until pork is almost falling apart. This will take about 2 hours. Add more water if necessary. Strain and reserve pork pieces; discard everything else. When it has cooled sufficiently, using two forks shred pork and spread out on a baking sheet. Place in oven preheated to 400°F and cook until pork becomes crispy; about 20 minutes. Place two tablespoons shredded pork on a tortilla and add topping of choice (home made Pico de Gallo or commercial salsa, Monterrey Jack cheese or mild cheddar, sour cream, chopped cilantro) and roll up.
