  1. Pre-heat oven to 350°F (177°C).

  2. Using a small sharp knife cut about 10 - 12 slits in the pork.

  3. Put a 1-2 fresh garlic clove in each slit.

  4. Mix together: 3 tbs (50 mL) Dijon Mustard, 11-2 tbs (25 mL) Olive Oil, 1 tbs (15 mL) rosemary leaf, 2 tsp (10 mL) cracked black pepper. Rub on Roast.

  5. Place roast in the oven and roast, uncovered, for about 11/4 hours or until a meat thermometer reads 155°F (68°C).

  6. Loosely cover and let rest for 10 minutes before carving.

  7. To carve simply cut between the bones.
