1 Seasoned Rack of Pork
Cooking Difficulty
- Pre-heat oven to 350°F (177°C).
- Using a small sharp knife cut about 10 - 12 slits in the pork.
- Put a 1-2 fresh garlic clove in each slit.
- Mix together: 3 tbs (50 mL) Dijon Mustard, 11-2 tbs (25 mL) Olive Oil, 1 tbs (15 mL) rosemary leaf, 2 tsp (10 mL) cracked black pepper. Rub on Roast.
- Place roast in the oven and roast, uncovered, for about 11/4 hours or until a meat thermometer reads 155°F (68°C).
- Loosely cover and let rest for 10 minutes before carving.
- To carve simply cut between the bones.
