Pork Chop Cacciatore

Ingredients


1 pkg Legacy Pork Loin & Rib Eye Chops (4’s)
2 tbsp Olive oil 30ml
½ Each: red and green peppers, sliced
1 medium onion, sliced
1 8oz (213ml) Tomato sauce
¼ cup White wine, or chicken stock 60ml
1 tsp Dried Italian herbs 5ml
Salt and pepper, to taste
1 cup Shredded mozzarella 250ml

 

Cooking Difficulty


In a small saucepan, heat 1 tbsp (15 ml) oil over medium-high heat. Sauté peppers and onion until softened; add pizza or tomato sauce, wine or stock, and Italian herbs. Simmer for 5 minutes. Heat remaining oil in a large skillet over medium-high heat; cook chops for about 3 minutes on each side to brown. Add peppers, onion, sauce mixture and Simmer gently for 20 minutes. Check seasoning. At serving time, transfer to an ovenproof serving dish and sprinkle with mozzarella. Place under broiler and broil until cheese begins to bubble and brown.
