Ingredients
2 lb potatoes, peeled and sliced (Yukon Gold) 1kg
3 tbsp butter 50 mL
- Salt and pepper to taste
1/4 tsp freshly ground nutmeg 1 mL
4 oz Swiss cheese (Gruyere), grated 125 g
2 cups 18% cream 500 Ml
2 egg yolks 2
Cooking Difficulty
Pre-heat oven to 350°F (180°C).
Liberally butter a ceramic or non-stick baking dish.
Place a single layer of sliced potatoes in dish, season with salt and pepper, and sprinkle with a small amount of cheese and nutmeg.
Repeat until all ingredients are used up, except for about 2 oz (50g) grated cheese..
Heat cream to a simmer. Whisk egg yolks in a bowl and gradually whisk in cream.
Pour cream mixture over potatoes and sprinkle with remaining cream.
Bake uncovered for about one hour, or until potatoes are tender and a golden brown crust has formed.
