Pineapple Salsa

Ingredients


Makes about 2 cups.

For the best flavor, make at least 30 minutes ahead of time to allow the flavors to mingle.

Fresh pineapple, peeled, cored & diced

½ cup

Cilantro, coarsely chopped

125mL

¼ cup

Red onion, finely chopped

Jalapeno pepper, seeded and finely chopped

Lime, juice and zest

Sea salt

Cooking Difficulty


Remove the lime zest with a fine rasp or grater. Toss all ingredients together in a large bowl. Serve immediately or cover and chill until ready to use.
