Moroccan Style Pork Chops

Ingredients


1 pkg Legacy Centre & Rib Eye Chops
1 tsp Ground cumin 5ml
1 tsp Ground coriander 5ml
¼ tsp ground cinnamon 2ml
¼ tsp Cayenne 2ml
1 tsp Olive oil 5ml
1 Box Couscous
¼ c. Raisins 60ml
¼ c. Dried apricots, diced 60ml
2 tbs Pine nuts 30ml

 

Cooking Difficulty


In small bowl, combine cumin, coriander, cinnamon and cayenne; rub mixture onto both sides of pork chops. Heat oil in large nonstick skillet over medium-high heat; cook chops, turning once, about 6 to 8 minutes.

Prepare couscous according to label directions, adding raisins, apricots and pine nuts to cooking water. Serve chops on top of couscous.
