Oven Roasting
- Place roast, uncovered, in a pre-heated 350ºF (180ºC) oven.
- Roast for approximately 1 hour and fifteen minutes or until an internal temperature of 155ºF (68ºC).
- Remove roast from oven and tent with foil.
- Allow roast to rest for about 15 minutes before carving.
- Carve between the bones, allowing one bone per person.
BBQ ROASTING: Wrap the roast in 2 sheets of foil. Light only one side of the BBQ & pre-heat BBQ to medium (350ºF - 180ºC). Place the roast on the "off" side of the BBQ and follow oven roasting instructions above.
