Oven Roasting

  1. Place roast, uncovered, in a pre-heated 350ºF (180ºC) oven.
  2. Roast for approximately 1 hour and fifteen minutes or until an internal temperature of 155ºF (68ºC).
  3. Remove roast from oven and tent with foil.
  4. Allow roast to rest for about 15 minutes before carving.
  5. Carve between the bones, allowing one bone per person.

BBQ ROASTING: Wrap the roast in 2 sheets of foil. Light only one side of the BBQ & pre-heat BBQ to medium (350ºF - 180ºC). Place the roast on the "off" side of the BBQ and follow oven roasting instructions above.
