Honey Mustard Cole Slaw

Ingredients


1/2 (about 6 cups) large head of cabbage, finely sliced (1.5L)
3/4 cup red onion, thinly sliced 175 mL
1 cup green bell pepper, thinly sliced 250 mL
1 cup celery, thinly sliced 250 mL
1/2 tsp salt 3 mL
1 tbs sugar 15 mL
1 tbs celery seed 15 mL
3 tbs Fresh dill, chopped 50 mL
 
For the dressing:
1 tbs fresh lemon juice 15 mL
1/2 cup mayonaise 125mL
1/8 cup Dijon mustard 30mL
1/8 cup honey, or to taste 30mL

Cooking Difficulty


Whisk together the ingredients for the dressing in a large mixing bowl; set aside.

Finely slice cabbage, red pepper, celery & onion. Place in a large bowl and sprinkle with the salt and sugar. Rub and squeeze the cabbage firmly to bruise it; let sit for 15 minutes. Drain accumulated juices. Add the and dressing toss until the cole slaw is well combined. Chill before serving. Serves 6.
