Greek Style Wilted Spinach Salad with Lemon Vinaigrette

Ingredients


6 cups Fresh spinach (about 1 bag) 1.5L
3 Tbs Extra virgin olive oil 50mL
2 Tbs Onion, diced 30mL
1 Clove garlic, minced 1
1/2 Tsp Dried oregano 3mL
1/4 Tsp Salt 1ml
1/4 Tsp Ground black pepper 1ml
1/4 Tsp Sugar 1ml
1 Tbs Fresh lemon juice 15ml
1/4 cup Feta cheese, crumbled 60mL
6 Black olives, pitted & sliced 6



 

 

Cooking Difficulty


Place spinach in large bowl. Add oil, shallot, garlic, oregano, salt, pepper, and sugar to small skillet and cook over medium heat until shallot is slightly softened, 2 to 3 minutes. Add lemon juice; swirl to incorporate. Pour warm dressing over spinach, add feta and olives, and toss gently to wilt. Serve immediately.
