Ingredients
12 cup Green Cabbage, sliced 3L
2 tbp Sea Salt 30 mL
1 cup Celery, sliced 250 mL
1 cup Onion, sliced 250 mL
1 cup Red Bell Pepper, sliced 250 mL
2 tsp Celery seed 10 mL
3 Tbs Fresh lemon juice 30 mL
1 Tbs White Vinegar 15 mL
2 tsp Sugar 10 ml
2 Tbs Canola oil 30 mL
Cooking Difficulty
The secret to this recipe is that everything must be sliced extremely thin. Place first four ingredients in a large bowl. Sprinkle with salt, sugar and celery seed. Use your hands in a squeezing and rubbing motion to bruise the cabbage and vegetables. Let rest for 30 minutes. Add the vinegar and lemon juice. Mix contents and taste to adjust for salt and sour to your taste. Add the oil and mix together.
