Chickpea Salad

Ingredients


1 19 oz (540g) can chickpeas
4 pieces roasted red peppers cut into strips (use product from a jar)
6 green onions, cut on the diagonal into (12 mm) slices
1 clove garlic, chopped
3/4 cup ripe tomato, seeded and cut into a small dice 175 mL
1/2 cup flat leaf parsley, coarsely chopped 125 mL
1/4 cup extra virgin olive oil 60 mL
1 Tbs red wine vinegar salt and ground black pepper to taste 15 mL

 

Cooking Difficulty


Drain and rinse the chickpeas and place in a bowl.
Add all other ingredients and mix well.
