Cooking Difficulty
In a medium bowl, mash the blue cheese with the salt and pepper with a fork until the pieces of cheese are finely broken up. Stir in the buttermilk, sour cream, wine vinegar and green onions until well mixed. Taste and adjust seasoning to taste. Thin the dressing with additional buttermilk, if desired. Garnish dressing with green onions and bacon bits.
