Guide to Pork Cuts: Cutlets

Pork cutlets are thin slices of meat taken from the leg or rib section of a pig. They are a meatier, and boneless cut of meat that is often enjoyed tenderized. That’s right, this is a cut of meat that you are encouraged to bash with a hammer!

They are usually pan-fried and often breaded. One of the most popular dishes made with cutlets is the schnitzel. Pork schnitzel is referred to as “Schnitzel Wiener Art” in Germany or “Wiener Schnitzel vom Schweim” in Austria. Sometimes they are even stuffed with mushrooms, bacon, onion and herbs.
